Who doesn’t love Mexican??  I was so happy to stumble upon this taco blend mix because I LOVE MEXICAN FOOD! 

It is made by Chicamonina Gourmet who has produced their products right at the Hope & Main Facility in Warren, RI.  I am always looking to spice up my fish meals because I am pescatarian!  This fish taco recipe seems so simple – I can’t wait to try it!  You can also use this taco blend mix with shrimp or any other seafood too.  There are so many other flavors she has too!

SEAFOOD TACOS RECIPE

Make the sauce:

o   1 Packet of Sauce Starter

o   1 Cup of Hot Water

Stir Sauce Starter with hot water then allow to cool. 

[Optional: For a smoother sauce, pure4e the cooled sauce in a blender.]

 

Marinate & Cook:

o   1 lb of Raw Seafood in 1” – 2” pieces

Suggestion: Shrimp, Bay Scallops, Haddock or a Combination

Marinate the seafood with the sauce for a few minutes. For a maximum flavor, marinate overnight in the refrigerator. 

In a non-stick pan on medium-high heat, add the marinated seafood.  Cover and bring to a brisk simmer for about 5-7 minutes or until cooked throughout.  [Optional: For a richer sauce, add 2 tablespoons of olive oil or equivalent during cooking proess.]

 

Serve & Garnish:

Serve and garnish with cilantro & onions.

A little bit about Chicamonina……….

Chicamonina is the nickname that my father gave me when I was a toddler. His calling me Chicamonina told me I was deeply loved. His days spent working with spices, the home my parents provided, the great homemade food created by my mother, and all my parents actions spoke to the love that surrounded me growing up.

Premium Red Chile

Our sauce starters are made from Hatch chile grown on small family-owned farms in New Mexico. Our chile does not develop the bitterness that can occur when quickly heated in hot industrial ovens. Our chile pods are slowly ripened on the plant allowing them to retain their naturally sweet, earthy, intense, and rich flavor.

When they are ready, the red chile pods are de-stemmed and de-seeded in order to produce a high quality “uncut” ground powder. “Uncut” red chile contributes to the unique rich umami flavor. Most red chile aficionados use slow ripened, de-stemmed and de-seeded red chile. A red chile aficionado is like a wine connoisseur, only the best is acceptable.
